I made the Emergency Brownies in Nigella's book At My Table. I tried doubling the recipe and baking them in a 7x7 pan but they turned out eggy and not like brownies at all. Is this because the recipe is not supposed to be doubled?
Our answer
Nigella's Emergency Brownies (from AT MY TABLE) are made with storecupboard ingredients and baked in a small disposable foil pan, so that they can be made without any special shopping trips. The ratio of eggs to other ingredients is not particularly high for a brownie recipe.
We wonder if the brownies were slightly under baked, which could account for the taste. Scaling up recipes is always a bit tricky but the oven temperature in this recipe is slightly lower than for regular brownies and the brownies may not have quite cooked through in the centre if made in a larger amount. Nigella prefers her brownies squidgy in the centre, but they should not be raw. For a larger quantity of brownies you may like to try Nigella's Bacon Brownies instead. You could replace the bacon with 100g walnut pieces if you don't want to try them with bacon.
