Can I double the recipe for Forgotten Cookies? I would like to make a double batch to bring to a party.

Nigella's Forgotten Cookies (from AT MY TABLE) are a cross between a meringue and a cookie, with a crunchy exterior and a softer, marshmallow-like interior. They are put into a hot oven, then the oven is turned off and the cookies are "forgotten" until the following morning, being left to cook in the residual heat of the oven.
The recipe makes 12-14 cookies. It is possible to make a double batch, provided that you have oven space and big enough baking sheets. Usually we suggest using the centre shelf of the oven for baking. However, as the oven is switched off immediately, it should not have such a marked effect if one set of cookies is slightly higher than centre and one set slightly lower, and we would not recommend rotating the baking sheets as this will just release heat from the oven. However, please bear in mind that there is a very small risk that the Forgotten Cookies on the lower oven shelf could be slightly stickier. Also, meringues generally bake best in dry conditions and wet or humid weather can make them slightly more sticky on the outside. Finally, if taking the Forgotten Cookies to a party, pack them carefully as they crush easily.
