I’ve made a huge batch of Apple And Cinnamon Muffins and tried one, gorgeous. The only thing is, the event I made them for has been postponed. I thought I can’t freeze muffins with chunks of apple in them as the fruit will go mushy? But Nigella says they can be frozen. Any ideas? Otherwise my neighbours are going to be very happy!

Nigella's Apple And Cinnamon Muffins (from KITCHEN) are autumnal-inspired muffins that are topped with a crunchy cinnamon-almond mixture. The diced apples are folded into the muffin batter before baking. They give soft nuggets of apple in each bite.
It is fine to freeze the muffins. As the apples are cooked inside the mufin, they have already let out some of their liquid and become softer. Raw apples can turn mushy if frozen and thawed, but apple compote, purée, sauce and cooked apple pie filling usually thaw without any major effect to the texture. The muffins can be frozen for up to 2 months and defrosted for 3-4 hours on a wire rack at room temperature.
