Full question
Hi - as the Coca-Cola Cake has to be frosted when warm, does that mean that I can't freeze it? Thanks.
Our answer
Nigella's Coca-Cola Cake (from HOW TO BE A DOMESTIC GODDESS) is a rich chocolate cake that is topped with a fudgy icing. Both the cake and the icing are made using a melting method. The warm icing is poured over the warm cake, which helps the icing to soak into the cake slightly and in turn helps to make the cake moist and almost brownie-like.
The cake is at its best within the first 3 days of making and can be stored in an airtight container. If you do want to freeze the cake then it is possible, but you need to be careful that the icing is not squashed. The icing can also sometimes turn a little sticky once it has thawed. If freezing the whole cake then wrap the cake, still in its pan, in a double layer of food wrap and a layer of foil and freeze for up to 1 month. If freezing leftovers, put the slices in a resealable container (with enough headroom so that the lid of the container is not touching the icing) and freeze for up to 1 month. To thaw the whole cake, remove it from the freezer and leave in a cool place overnight. Unmould the cake from its pan before serving. For slices of cake, let them stand at room temperature for 2-3 hours.
