After making the Spiced Peaches recipe can you freeze them? They won't last very long in the fridge. Thank you.
Our answer
Nigella's Spiced Peaches (from NIGELLA EXPRESS) are tinned, jarred or canned peaches that are warmed with spices to make a delicious condiment to accompany ham or cheese or any cured meats that will be enhanced if served alongside something sweet and spicy.
Canned peaches are good for this type of dish as usually the peaches are processed at peak ripeness and have a good flavour. The canning process cooks the peaches in a light sugar syrup to preserve them. The advantage of this process is that the peaches are tender but not mushy. Unfortunately we can't recommend freezing the Spiced Peaches, as in our experience they become unpleasantly mushy once thawed. We suggest storing the Spiced Peaches in the fridge and using them within the time limit specified on the can or jar of peaches. However, in the UK and US you can buy cans of peaches in smaller sizes (around 410-420g or 15 ounces), so if you are worried that there will be too much leftover then use one of these smaller-sized cans and use only half of all of the other ingredients in the recipe to make a smaller quanity of Spiced Peaches.
