Our answer

Nigella's Warm Blondie Pudding is a gluten-free pudding made with ground almonds (almond meal),white chocolate and eggs and spiced with ginger. It is best served warm, though leftovers can be kept in the fridge for up to a week.

We would not recommend making the blondie pudding in advance and freezing it, as it doesn't have the same melting texture if it is reheated. However, if you want to freeze leftovers then we would suggest chilling the leftovers overnight in the fridge, so that it is firmer and therefore easier to cut up and wrap. Cut the pudding into individual portions and wrap each portion with food wrap. Put the wrapped portions in an airtight container and freeze for up to 3 months. Thaw individual portions overnight in the fridge and eat cold, either with creme fraiche and a few raspberries, or with a cup of tea or coffee.
