Can I Make A Bigger Dark And Sumptuous Chocolate Cake?

Full question
My 2 year old granddaughter is allergic to eggs, so I made Nigella's Dark And Sumptuous Chocolate Cake for the first family birthday she attended back in January. It was a big hit (even though it sank) and was eaten with loads of cream. But now I have been asked to make it for my son's wife's family and there are quite a lot of them! So I would like to make the cake in a bigger tin. Is this possible?
Our answer
Nigella's Dark And Sumptuous Chocolate Cake (from SIMPLY NIGELLA) is a vegan chocolate cake that is enjoyed by everyone. It is also extremely easy to make. The cake is baked in a 20cm (8-inch) springform pan.
To go from a 20cm pan to a 25cm (10-inch) springform pan usually means that you need 1.5 times the original ingredient quantities. As the cake doesn't contain any eggs it is fairly straightforward to multiply up the ingredients quantities. The baking time is a bit more tricky and we suspect that the cake is likely to take around 45-55 minutes to bake. Keep an eye on the cake but don't open the oven for at least 35 minutes, as if you open the oven and the centre of the cake has not set then the rush of cold air can cause the cake to sink. The cake is done when it is risen, firm to the touch and starting to shrink away from the sides of the pan. A cake tester inserted into the centre should come out clean. However, please note that as we have not tried the cake in this size ourselves, we are unable to guarantee the results. For the frosting we would suggest also making 1.5 times the original recipe quantities.
