I make the Black Cake every year. I’d like to make a smaller one. How do you alter the cooking times if you use a 6-inch tin?

Our answer

Nigella's Black Cake is a version of the traditional Jamaican rich fruit cake that is normally served at Christmas. it has fruit that has been soaked for many months in a combination of rum and Madeira. Nigella's cake is baked in a 23cm (9-inch) round springform or deep cake pan. We would mention that the soaked fruit mixture should be included in the ingredients list for the cake, though unfortunately this was omitted from the early editions of HOW TO BE A DOMESTIC GODDESS).

If you want to make a smaller cake then for a 15cm (6-inch) pan you would need to use half of the ingredients quantity in the recipe. We would suggest baking the cake at 180c/160c Fan/gas mark 4/350F for 40 minutes and then reducing the oven to 170c/150c fan/gas mark 3/325F for a further 1 1/4 to 2 hours. The cake is done when a cake tester inserted into the centre comes out clean. However, please note that as we have not tried the cake ourselves in this size, we are unable to guarantee the results.
