Asked by Fantastic3. Answered on 27th March 2022

Full question

Can this recipe be made into a 9in x 12in traybake? If yes, how long would it need to be baked for? Thank you in advance.

Our answer

Nigella's Chocolate Cake With Coffee Buttercream (from AT MY TABLE) has a moist chocolate sponge that is easy to make as the ingredients are simply stirred together. The sponges are baked in two 20cm/8-inch round pans.

Generally this size of cake can be converted to a traybake (a single layer rectangular cake) approximately 22 x 33cm/9 x 13 inches. The cake will be slightly thicker than a single layer of the round cake. Baking time should be approximately 30-35 minutes, but you may want to take a small peek at 25 minutes. When cooked, the cake should be risen, firm to the touch and a cake tester inserted into the centre should come out clean or with the odd damp crumb attached (but not uncooked cake batter). As the recipe has enough coffee buttercream to fill and top the cake, it should be enough buttercream to generously top the traybake. However, as we have not tried the cake in traybake form, we are unable to guarantee the results.
