Can I Make Flora's Courgette Cake With Marrows?
Asked by bakingnicole. Answered on 6th September 2014
Full question
I have a glut of rather large marrows and would like to use these as a substitute for courgettes in Flora's Courgette Cake. Obviously I have to peel it because the skin is too thick to be edible, but could you tell me if it would work as well as the normal courgettes would? Thanks.
Our answer
Flora's Famous Courgette Cake (from Domestic Goddess) uses grated courgette (zucchini) in the cake batter. The courgette mainly adds moisture to the cake, rather than any particular flavour. As marrows and courgettes are from the same family then we suspect that it should be fine to substitute the marrow for the courgette.
We would agree that it would be best to remove the skin from the marrow, and we would also suggest deseeding the marrow and just grating 250g of the flesh. Marrow flesh may contain marginally more water than courgettes but we suspect that this will not make much difference. And let the grated marrow sit in a sieve or strainer over the sink for a few minutes to drain, as for the courgettes in the recipe.
