How can I adjust Nigella's Christmas cake recipe to make mini cakes (each individual hole 6.5cm diameter x 3.5cm height)? Thank you.
Our answer
Nigella has several Christmas cake recipes, but the Easy-Action Christmas Cake (from FEAST is easy to mix and makes a 20cm (8-inch) rich fruit cake. This amount of cake batter will make around 24 muffin or cupcake-sized small cakes, so you would need roughly a half quantity for 12 mini cakes.
Cupcake or muffin pans usually have a diameter of around 6cm and a depth of around 3cm. We would suggest lining the holes of the pan with paper cupcake cases for ease and at 170°C/150°C fan/325°F these small cakes will take around 35-40 minutes to bake. A toothpick inserted into the centre should come out clean and if the cupcakes aren't quite done then give them another 5 minutes before testing again. Cool the cakes in the pans for around 10 minutes before removing them to a wire rack to cool. If your pan is slightly larger then you will need to edd an extra 5-10 minutes to the baking time, but keep an eye on them after the first 40 minutes of baking.
