What can I use instead of yogurt/buttermilk to tenderise the chicken for the Ritzy Chicken Nuggets? Your recipe looks great but my daughter is now dairy free. Is there another option?

Nigella's Ritzy Chicken Nuggets (from Feast and on the Nigella website) are chicken strips coated in Ritz cracker crumbs. The chicken is soaked in a mariande of buttermilk before coating and the buttermilk helps the coating to stick to the chicken, as well as tenderizing it a little.
You could omit the marinating step and instead dust the chicken strips with a little plain/all-purpose flour, dip in beaten egg and then coat them with the cracker crumbs (at time or writing Ritz crackers appear to be dairy free but always check the packaging before using). If you wanted to marinate the chicken strips then we would suggest using a dairy free natural/plain (unsweetened) yogurt instead of the buttermilk.
