Our answer

Nigella's Almond And Orange Blossom Cake (from HOW TO EAT) is a moist cake made with ground almonds (almond meal or almond flour) and scented with orange-flower water. The cake can be made gluten free by using rice flour instead of plain flour.

The cake is baked in a 20cm springform pan and this usually has a capacity of around 1.8 litres. A 2-pound loaf pan (which we consider to be 23x13x8cm or 9x5x3 inches) has a capacity of around 1.9 litres, so the amount of cake batter should be roughly correct for the loaf pan. However, as a loaf pan is deeper than a springform pan and can brown on top easliy, it may be advisible to reduce the oven temperature to 170c/150c fan/325F. The cake will probably take 50 minutes to 1 hour to bake and is done when the cake is risen, firm to the touch and a cake tester inserted into the centre comes out clean. The cake is quite tender, particularly if you use rice flour, so you will need to line both the base and all sides of the loaf pan or use a loaf pan liner paper and make sure that the cake has completely cooled before you remove it from the pan. You may also need to cut the cake carefully without pressing down too hard, to reduce the risk of the cake crumbling as you cut it.
