Full question
Is there any way to make the Baklava Muffin recipe gluten free? I have been making these babies for about 16 years and now need a gluten-free option. Any help or advice would be awesome!!
Our answer
Nigella's Baklava Muffins (from HOW TO BE A DOMESTIC GODDESS) are muffins that are filled with a spiced walnut mixture and topped with a drizzle of honey while still warm. The recipe uses regular plain flour.
It may be possible to make a version of the muffins with gluten-free flour. However, it is worth mentioning that they will not be as light as muffins made with wheat flour. And it is usually easiest to use a plain (all-purpose) gluten-free flour blend or baking blend. We have also found generally that a mixture of gluten-free flour and ground almonds (almond meal or almond flour) gives a slightly better texture and moisture than using just gluten-free flour. Up to half of the flour could be replaced with ground almonds, but as the muffins already contain a lot of nuts it may be better to use ¼ to ⅓ of the weight in ground almonds, so 70g (¾ cup) of ground almonds and 140g (generous 1 cup) of gluten-free plain flour. Please note however that we have not tried the muffins with gluten-free flour, so are unable to guarantee the results.
