Our answer

Nigella's Chocolate Malteser Cake (from FEAST/ is a popular chocolate cake that is flavoured with malted milk. The sponge does not contain much fat, which makes it very light but also means that it is best eaten on the day that it is made.

The recipe makes two 20cm (8-inch) round layers. if you wanted to make the cake into a single layer traybake for a 33x23cm (13x9-inch) rectangular pan then we suggest that you double all of the ingredients. This should make a sponge that is slightly deeper than one layer of the round cake. However, do make sure that your pan is at least 5cm (2 inches) deep and line the pan with baking parchment (parchment paper) with the parchment coming up the sides of the pan. For this type of cake the baking time at 170C/150C fan/325F should be around 35 minutes if you are using a metal pan, but take a careful look at 30 minutes and check regularly after that. The sponge is done when it is risen and the centre springs back gently when pressed. The icing should be enough to cover the top of the cake, but you could increase it slightly if you want a thicker layer of frosting. However, please note that as we have not made the cake ourselves in this size pan, we are unable to guarantee the results.
