Can I Make The Coffee And Walnut Cake In One Tin?

I only have one cake tin, can I do the Coffee And Walnut Layer Cake as one larger cake and then cut in it half? What would I need to adjust?

Nigella's Coffee And Walnut Layer Cake (from KITCHEN) is a coffee-flavoured sponge cake that is enriched with ground walnuts.The cake is baked in two sandwich tins (cake pans) as the layers cook quicky and you don't need to worry about cutting the cake in half.

It may be possible to bake the cake in one pan but it needs to be quite a deep pan, such as a springform pan. The cake batter should not come more than 2/3 up the sides of the pan. You can line the base and sides of the pan with baking parchment (parchment paper), with the paper lining the sides reaching about 3cm (1 inch) above the top of the tin to reduce the risk of the cake batter overflowing. For a large cake it may be better to lower the temperature of the oven and cook for slightly longer, to prevent the edges of the cake burning. You may like to try turning the oven down to 160c/140c Fan/325F and baking the cake for around 1 hour, though start peeking through the oven door at around 50 minutes. The cake will be risen, firm on top, slightly shrinking away from the sides of the tin and a cake tester inserted into the centre will come out clean. Make sure that the cake is completely cold before you try to cut it. However, as we have not tried baking the cake in this way, we are unable to guarantee the results.
