Can I Make The Forgotten Cookies In Batches?

Full question

I'd like to make the Forgitten Cookies but I only have one oven and only so much room for cookie sheets. What if I want to make multiple batches at the same time? Any suggestions?

Our answer

Nigella's Forgotten Cookies (from AT MY TABLE) are a cross between a cookie and a pavlova meringue. The cookies are put into a hot oven that is immediately turned off and the cookies are left overnight to cook in the residual heat.

Depending on the size of the oven, you could probably bake two baking sheets of Forgotten Cookies at the same time, as the cookies are left in the switched-off oven. However, beyond that we can only suggest that if you are not using the oven during the day, that you cook one to two batches overnight then make another one to two batches the following morning and once you have taken the first set of baked cookies out of the oven then you reheat the empty oven and use it to cook the extra batches, leaving the cookies for 8-10 hours in the switched-off oven during the day.
