Full question
Would the Fresh Gingerbread With Lemon Icing be suitable for a Bundt cake or is it too sticky a mix for the tin?
Our answer
Nigella's Fresh Gingerbread With Lemon Icing (from HOW TO BE A DOMESTIC GODDESS) is a sticky gingerbread that includes grated fresh ginger, which gives a slightly more lively, spicy flavour. The gingerbread itself is quite sticky and the tin needs to be lined with baking parchment (parchment paper) to prevent the cake from sticking to the tin. Unfortunately we suspect that the cake is too sticky and tender to be turned out of a bundt tin without sticking or breaking up.
However, we would suggest instead trying Nigella's Cider and 5-Spice Bundt Cake. This has many similarities with the Fresh Gingerbread as it uses grated fresh ginger and has the rich notes of dark brown sugar and treacle (molasses). The recipe has been developed so that the amount of batter is enough for a 2.5 litre (10-cup) bundt pan and so that the cake texture is robust enough to be turned out of a bundt pan. You can use a thinner lemon glace icing on the cake by adding more lemon juice or a little water to the Fresh Gingebread's lemon icing to thin it slightly. Nigella also mentions in the introduction to the recipe that you can increase the amount of fresh ginger used if you want a more pronounced ginger flavour.
