Full question
Can you make the Honey Semifreddo recipe without eggs? My son is allergic to both eggs and soy. If it is possible to make this recipe without eggs could you please advise whether I need to substitute anything for them? And could you also advise whether the directions need to be changed at all?
Our answer
Nigella's Honey Semifredo (from NIGELLA SUMMER) is a frozen dessert. The egg and egg yolks are whisked with the honey to make a moussey sabayon, before whipped cream is folded in. The eggs give the semifreddo a rich texture and also help to prevent the dessert from becoming too hard and icy when it is frozen.
Unfortunately there is no substitute for the eggs in this dessert. But we would suggest looking at Nigella's no-churn ice cream recipes as none of these use a custard base and so don't contain any eggs. Condensed milk and cream are the main ingredients and these should not usually contain soy, though please do check the brands you use just in case. The No-Churn Salted Caramel Bourbon Ice Cream could be a good alternative and you can omit the bourbon if you are making it for children. But there are also many other no-churn ice cream recipes and you can find the full selection by entering "no-churn" into the recipe search bar on Nigella.com.
