Hi - I would like to bake Nigella’s Marble Cake from Feast. I was wondering if it would be possible to substitute the orange juice with milk for that recipe as I’m not a big fan of orange flavoured cakes. Thanks.

Nigella's Marble Cake (from FEAST) is a mixture of plain and chocolate sponge batters that are swirled together before baking to give a marbled effect. Nigella makes hers in a ring mould though this type of cake can also be baked in a loaf or springform tin.
The orange zest helps to flavour the cake and the orange juice adds some extra moisture. We believe that milk could be used as an alternative to the orange juice as the cake ingredients include both bicarbonate of soda (baking soda) and baking powder and so you do not necessarily need the addition of an acid to activate the bicarbonate of soda to make the cake rise. However we would add two teaspoons of vanilla extract to the batter in step 2, in lieu of the orange zest, as without this and without orange zest the cake could taste a little flat.
