Our answer

Nigella's Slow Roast Pork Belly (from KITCHEN) has the meat (but not the rind/skin) rubbed with an Asian-inspired marinade made from soy sauce, tahini and lemon and lime juices. The marinade seasons and flavours the meat but leaving the marinade off the rind lets it cook to crisp perfection in the oven.

Tahini is a sesame seed paste and if you are allergic to this then we would suggest using smooth (creamy) peanut butter as an alternative, or your favourite nut butter. Try to use a natural nut butter made completely from ground nuts, as some nut butters (particularly peanut butters) contain added vegetable fats and sugar. If you can't use nuts either then just whisk together the soy sauce and citrus juices and splash as much of this as you can on the meat. The marinade will be much thinner in consistency without the addition of tahini or a nut butter and so won't stick quite as well to the meat, but you could baste the meat with the marinade once or twice while it sits in the fridge, taking care not to get marinade onto the rind of the pork.
