In the Old Fashioned Sandwich Loaf recipe, is it possible to use 0% fat Greek yogurt instead of sour cream or spoilt milk? Also if using spoilt milk, does it have to be whole milk or will semi-skimmed do? Thank you.
Our answer
Nigella's Old-Fashioned Sandwich Loaf (from COOK, EAT, REPEAT) is a very popular bread recipe as the dough doens't need kneading in the traditional way. Nigella made the loaf with some milk that had turned slightly sour in the fridge. Usually we would sugest using either whole milk or semi-skimmed (reduced fat) milk. You can also use sour cream.
The spoilt milk and sour crream have a slight lactic tang, which gives the loaf a nice flavour and you can also get this from yogurt and other fermented dairy products. The fat in the butter and milk also helps to give the loaf a slightly finer, softer crumb. However, the Comments from people making the bread show that they have been using lots of different substitutes, such as kefir and plain yogurt, so we suspect that if you use fat-free (non-fat or 0%) Greek yogurt or Greek-style yogurt then the bread will still be delicious. But if you use fat-free yogurt, do make sure that you use the full 45g (3 tablespoons ) of butter.
