Nigella's Passionfruit Ice-Cream Cake With Coconut-Caramel Sauce (from AT MY TABLE) is easy to make and dream to eat. The cake itself is a simple combination of whipped cream, crushed store-bought meringues, passionfruit pulp and orange liqueur. This mixture is packed into a loaf tin and frozen until needed.

There is no particular reason why the mixture should not be frozen in a bundt tin, but bundt tins usually have a much bigger capacity than a 450g (1-pound) loaf tin. The loaf tin usually has a capacity of around 1 litre (4 cups) whereas most bundt tins have a capacity of 2 litres (approx. 8 cups) to 2.8 litres (approx. 12 cups). So you will need to make either 2 or 3 times the quantities in the recipe. To check the capacity of the bundt pan, fill it with water and then measure the volume of water used. The pan should also be competely lined with clingfilm (plastic wrap) or reusable food wrap, so that the frozen ice-cream cake releases easily from the pan.
