Our answer

Nigella's Quadruple Chocolate Loaf Cake (from FEAST) has four forms of chocolate - cocoa powder and chocolate chips in the batter and then finished with a cocoa syrup and chocolate shards. The cake batter is fairly liquid, which suggests that it should have enough liquid to convert to gluten-free flour. But the loaf may sink as it cools due to the lack of gluten and we have not tried the loaf ourselves with gluten-free flour.

Instead, we would suggest trying Nigella's Chocolate Tahini Banana Bread. This is made with rice flour, which is gluten free, and includes chocolate chips in the batter. You could omit the sesame seeds from the top and add the cocoa syrup after baking (we would suggest using a half quantity of syrup as the Chocolate Tahini Banana Bread is a smaller loaf) and then top with shards of chocolate.
