We don't mind gluten. Can the Scented Citrus Cake be made with regular flour? Also how long would it bake as cupcakes? Thanks!
Our answer
Nigella's Lemon Citrus Cake (from [AT MY TABLE](/books/at my table)) is a gluten-free cake made with a combination of rice flour and ground almonds (almond meal). Many of Nigella's gluten-free cakes contain ground nuts as the nuts help to add extra moisture as well as helping with the overall texture of the cake.
Unfortunately we can't recommend using regular flour for the cake as we haven't tried the cake with this combination. Wheat flour absorbs different amounts of liquid to rice flour and using regular flour will change the balance of the recipe. So we would prefer to stick with the rice flour, which also gives the cake a delicious, crumbly texture. It may be possible to bake the cake as cupcakes, but we would suggest that you use paper cupcake liners as the cake is quite tender so it will be easier to remove cupcakes from the pan if they are in paper liners. We estimate the cake will make 8-12 cupcakes and the liners should be filled around 3/4 full of batter. Cupcakes usually take around 20 minutes to bake at 180c/160c Fan/350F. You will probably need to make slightly more glace icing, but we suggest making the amount in the recipe to start with, using that first and then making extra as needed.
