Full question
I want to make Nigella’s lovely Spruced-Up Vanilla Cake, and I remember seeing her using the processor for making the batter. However, the recipe online here gives either making the batter by hand or using a freestanding mixer. Is it no longer advised to use the processor? It seems so much easier than doing it by hand!
Our answer
Nigella's Spruced-Up Vanilla Cake (from NIGELLA CHRISTMAS) is a moist bundt cake that Nigella bakes in a fir tree-shaped pan at Christmas. The cake batter includes eggs, sugar, flour, butter and yogurt.
Unfortunately we found that many regular food processors did not have a large enough bowl to mix the ingredients easily, hence the freestanding (or hand mixer) and by hand methods being prioritised. However, if you have a food processor with a large capacity bowl then it is possible to make the cake in the processor, but process just until the ingredients are combined to prevent overmixing the cake batter.
