Full question
Will the Vanilla Layer Cake with Ermine Icing recipe work if I made cupcakes with the batter? Do I need to adjust the cooking temperature? Thank you!
Our answer
Nigella's Vanilla Layer Cake With Ermine Icing (from AT MY TABLE) is a light and tender sponge cake with a voluptuous frosting. The cake is slightly unusual in that it contains vegetable shortening, but this contributes to its fine crumb and delicate texture.
A two-layer 20cm/8-inch cake will usually make 20-24 cupcakes. Fill the cupcake cases to halfway with cake batter. For cupcakes you would still set the oven to 180C/160C fan/350F. Cupcakes usually take about 18-20 minutes to bake, but if you can, try to check at 15 minutes. The cupcakes are done when they are risen, golden brown on top, firm to the touch and a cake tester inserted into one of the cupcakes in the middle of the pan comes out clean. Cool the cupcakes in the pan for 10 minutes, then transfer to a wire rack to cool completely.
