Full question
Can I keep the Chocolate Peanut Butter Fudge sauce in the fridge, to be used later? Will I then need to warm it up?
Our answer
Nigella's Chocolate Peanut Butter Fudge Sundae (from NIGELLA EXPRESS) has scoops of vanilla, chocolate and caramel ice cream topped with a warm, thick chocolate sauce.
The sauce is made from a combination of milk chocolate, cream, smooth (creamy) peanut butter and golden syrup. You need to use regular peanut butter and not a "natural" peanut butter (made from just ground nuts) as the regular peanut butter is smoother and has some added vegetable fat that helps the texture of the sauce. The sauce can be refrigerated for up to one week (refrigerate as quickly as possible and within 2 hours of making), but it will solidify in the fridge. To warm the sauce, either transfer it to a microwaveable bowl and heat in 10-second bursts, stirring in between each burst, until fluid and just warm. You can also put the sauce into a saucepan and heat it very gently over a low flame, stirring frequently, until fluid and just warm. Whichever method you use, keep an eye on the sauce to make sure that it doesn't overheat, otherwise it could turn grainy.
