Can I Substitute The Tomato In Speedy Seafood Supper Sauce?

The Speedy Seafood Supper is a great looking quick feed but do you have a suggestion on something to replace the tomato? For those of the tomato allergy band - a mushroom sauce maybe?

Our answer

Nigella's Speedy Seafood Supper (from KITCHEN) is a fast stew made with frozen seafood. The tomato and saffron flavours are reminiscent of the French Bouillabaisse.

If you can't use tomatoes of any sort then we would suggest replacing them with 225ml (scant 1 cup) of good quality fish stock (broth). However bear in mind that it will give a less thick, more soupy, consistency to the dish. Given the flavours of the vermouth, we would also cook half a bulb of fennel, finely chopped, with the spring onions at the beginning of the recipe. We would not particularly recommend a thick mushroom sauce, but if you particularly like mushrooms then you could fry some thinly sliced mushrooms separately and then add them at the end of the cooking time, before you taste and adjust the seasoning.
