Can I Use A Different Meat For Ed's Mother's Meatloaf?

Hello team, I would love to make ‘Ed’s Mother’s Meatloaf’ but beef isn’t available where I am. What would you suggest instead? I can get pork, lamb, goat, sausage etc. Thanks so much.

Nigella's recipe for Ed's Mother's Meatloaf (from KITCHEN) gives a moist and well-flavoured meatloaf. The recipe uses minced (ground) beef, though in the US it is also quite common to use a combination of beef, pork and veal for meatloaf.

The main thing to consider is the amount of fat in the meat as lean meats will make a drier meatloaf. Pork would probably be the closest option, though a mixture of half pork and half goat could be interesting. Minced or ground chicken or turkey could also be considered, but make sure it is thigh or a combination of breast and thigh as thigh meat gives better flavour and moisture. Lamb usually has a good level of fat but is not normally associated with meatloaf. We would avoid using sausage as it already has cereal fillers mixed in.
