Is it possible to substitute erythritol or xylitol in the Chocolate Olive Oil Cake for someone who is diabetic? Similarly, could golden caster sugar be substituted instead of refined caster sugar? Thank you.
Our answer
Nigella's Chocolate Olive Oil Cake (from NIGELLISSIMA) is a popular gluten-free cake (when made with ground almonds/almond meal). The cake is made with caster (superfine) sugar and unfortunately we are unable to advise on using sugar alternatives as some need adjustments to the amounts used and some absorb liquids in different ways, meaning that they can change the texture of the cake. As the cake is already more tender as it does not have any gluten, we are worried that switching to a sugar alternative could cause it to break up too easily or become dry and crumbly. Even if you use plain flour in the recipe, the cake may be too dry.
However, we do think that golden caster sugar (in the US sold as Golden Sugar) could be used as an alternative to regular caster or superfine sugar. Golden caster sugar is less refined and still has some traces of molasses. But this is likely to complement the flavour of the chocolate and the texture of the cake will not be compromised.
