Our answer

Nigella's Old Fashioned Tomato Salad (from NIGELLA SUMMER) gets its name from the dressing, which is similar to salad cream, a British favourite. Nigella uses tarragon vinegar as the slightly anise flavour goes well with the sweet tomatoes. However, you could use a good-quality white wine vinegar as an alternative.

If you have dried tarragon then you could also cover 1 teaspoon of this with 60ml (¼ cup or 4 tablespoons) of white wine vinegar, cover it and and leave it to steep overnight. The next day, strain out the dried herb and use the flavoured vinegar in the dressing. If you wanted to add some fresh tarragon to the finished dressing then we suggest doing this very sparingly, as the flavour of the tarragon can easily take over the whole salad.
