Full question
This dish looks fabulous. Try as I might, however, I am just not a fan of lentils. Do you think that rice would serve as a possible alternative to those little legumes? Or, if not rice, can you suggest another ingredient?
Our answer
Nigella's Indian-Spiced Shepherd's Pie (from SIMPLY NIGELLA) has a filling made with minced (ground) lamb and small red/orange lentils. The lentils help to thicken the filling, as well as adding a little extra substance. You should find that the lentils almost disappear into the meat filling, so even if you don't like lentils you may not actually notice them.
However if you do really need to avoid lentils then they can be left out. You won't need to add as much water to the meat, we would suggest adding just 1/4 can of water rather than a full can. Each time you stir the lamb, check and add a splash of extra water if necessary. But if you find that there is too much liquid once the lamb has cooked, uncover the pan and simmer for a futher 5-10 minutes, to reduce the sauce slightly. There will be slightly less filling without the lentils, but still plenty for 4 portions.
