Our answer

Nigella's No-Churn Chestnut Ice Cream (from NIGELLISSIMA) uses sweetened chestnut puree (chestnut spread) mixed with whipped cream to make the ice cream. Rum is added to the mixture for a little flavour and also the small amount of alcohol helps to improve the texture of the ice cream, making it less icy and more scoopable.

You could substitute a similar liqueur for the rum; and brandy, bourbon, whisky or Tuaca could be used. You could also omit the alcohol completely, but if you do this transfer the ice cream to the fridge 20-30 minutes before serving, to let it soften a little.
