Can I Use Buttermilk Birthday Cake To Make Princess Doll Cake?

Asked by Td2100. Answered on 26th November 2021

Full question

I want to make my daughter a Princess Doll birthday cake where the skirt of the dress is a sponge cake. I was hoping to use the Buttermilk Birthday Cake recipe but wasn’t sure how to adapt the quantities and cooking temperature/time for cooking in a doll cake tin? Happy to use another Nigella recipe if that would be better suited?

Our answer

Nigella's Buttermilk Birthday Cake (from HOW TO BE A DOMESTIC GODDESS) is a very versatile cake that can be used for layered cakes or for shaped cakes. Nigella mentions in the recipe introduction that she has used the recipe for a Princess Doll cake and that you need roughly a double quantity of the cake batter. The baking time should be about 1 hour at 180°C, but if you have the special mould with a heat-conducting rod in the centre then it could be shorter (approximately 40-50 minutes).

Make sure that you grease the mould really well and it may help to dust the inside of the mould with a little flour as well, to make sure that the cake turns out easily. Fill the mould about three-quarters full, to allow for the cake to rise as it bakes. The cake is done when the cake is risen, firm, slightly shrinking away from the sides of the mould and a cake tester inserted into the centre comes out clean. Cupcakes made from leftover batter will take 15-20 minutes to bake at 180°C.
