For the Malteser Cake can I use Chocolate Horlicks as I have some in my cupboard? Do I leave out the cocoa or reduce the amount?
Our answer
Nigella's Chocolate Malteser Cake (from FEAST) gets its chocolate malt flavour from a combination of cocoa powder and Horlicks (a UK brand of malted milk powder). The recipe uses the "original" type of Horlicks (where you add milk), rather than the "light" type (where you add boiling water).
Chocolate Horlicks is the type that you add to boiling water, so is not the ideal ingredient for the recipe. It is not a "light" version of Horlicks, but it has a higher proportion of milk powder and fat than the original version and this may slightly affect the texture of the finished cake. So our preference would be to use original Horlicks. If you did want to try using the chocolate Horlicks then we note that the amount of cocoa in this version of Horlicks is very low, so we would probably just use the same amount as for the regular Horlicks and not change the amount of cocoa in the recipe. And as we have not tried the cake with chocolate Horlicks, we are unable to guarantee the results.
