Full question
Could I substitute milk or dark chocolate for the white chocolate in the White Chocolate Cheesecake recipe?
Our answer
Nigella's White Chocolate Cheesecake (from AT MY TABLE) is a no-bake cheesecake with a filling made from cream cheese, whipped cream and melted white chocolate. The white chocolate helps to give a creamy vanilla flavour to the cheesecake and also helps it to set to a light, almost mousse-like texture. Many people who do not like white chocolate still love the cheesecake.
White chocolate doesn't contain any cocoa solids, only cocoa butter, sugar, vanilla and some vegetable fat. Milk and dark (bittersweet) chocolates both contain some cocoa solids. This will start to affect the way the mousse sets and will affect the texture. They also contain different levels of sugar, which will affect the flavour. So we prefer to use white chocolate for the cheesecake. However, you may like to try Nigella's Nutella Cheesecake as a no-bake alternative or the rich and intense baked Chocolate Cheesecake.
