Nigella mentions in the introduction that the dill can be replaced with parsley if you don't like the anise flavour of dill. Fennel fronds could be another alternative to dill, though fennel fronds tend to have a slightly stronger, almost liquorice-like flavour. The recipe uses a bunch of dill, which for the UK is usually a bunch weighing around 25g (1 ounce), giving about 6 tablespoons of chopped dill. It can be quite difficult to gather this amount from supermarket-bought bulbs, but easier if you happen to grow your own fennel.
