Full question
For the Sausages with Beans and Peppers, if I don't have red vermouth then can I substitute with red wine or sherry?
Our answer
Nigella's Sausages With Beans And Peppers (from NIGELLISSIMA) cooks Italian sausages in a combination of canned tomatoes, canned and drained beans and a jar of roasted sweet peppers. This makes the dish quick to put together and from mostly pantry ingredients. The herbaceous notes of red vermouth boost the flavour of the sauce.
Red vermouth lasts for quite a while after opening and is useful to have on hand to splash into stews, soups and gravies. But if you don't have any then you can use red wine as an alternative. We are not sure about using sherry, but if you wanted to try then use a dry sherry and bear in mind that it will give the dish a more Spanish slant. Alternatively, you could use vegetable or chicken stock if you don't have any vermouth or wine open or if you would prefer to avoid alcohol.
