Hi Nigella, can I substitute couscous for rice and still do the dill, pinenuts and coriander? (I'm Celiac)

Our answer

Nigella's Moroccan Vegetable Pot (from AT MY TABLE) is accompanied by a pine nut and dill couscous that soaks up the delicious sauce. Couscous is easy to prepare as you just need to cover it with hot stock (broth) or water. But as it is made from wheat it is not suitable for coeliacs.

You could use rice as a gluten-free alternative. White rice will be fluffier and lighter than brown so that would be our preference. Cook the rice as you usually would, using vegetable stock instead of water. Once the rice has cooked, fork through about 3/4 of the pine nuts and 1 tablespoon of the dill, then continue with the recipe.
