Can I Use Semolina In The Lemon Polenta Cake?

Full question

I don’t have any polenta so can I use semolina instead for the Lemon Polenta Cake? I have plenty of that. I would need to buy polenta and I don’t particularly like it.

Our answer

Nigella's Lemon Polenta Cake (from KITCHEN) is a gluten-free cake made with finely ground polenta or cornmeal plus ground almonds (almond meal). This combination gives the cake a crumbly texture and the lemon syrup makes sure that the cake is moist and citrussy.

We suspect that you can use semolina instead of polenta, but it should be fine semolina and not coarse semolina. Semolina is slightly paler in colour than polenta, so the cake will not have quite the same golden hue. But please note that as semolina is made from durum wheat, the cake will no longer be gluten free. Also, as we have not tried the cake with semolina, we are unable to guarantee the results.
