Do you have a suggestion of how to compensate for lack of fat if I only find skinless chicken breasts for the Lime And Coriander Chicken? And is there a starch you might suggest to serve this dish with? Thank you!

Nigella's Lime And Coriander Chicken (from AT MY TABLE) flattens chicken breasts into escalopes and then marinates them in lime juice, oil, garlic and salt before pan frying them.
If you can only get skinkless breasts then that is fine as the skin is removed from the chicken before it is flattened and marinated. The oil in the marinade, combined with the oil in the frying pan and the cooking technique means that the chicken should not be dry. The main benefit of buying chicken breasts with the skin on is that the skin can be fried, separately, until crisp and then crumbled over the dish to add extra texture. But the chicken itself will still be delicious if skinless breasts are used. As a side dish Nigella recommends smashed avocado and iceberg lettuce and if you would like to add a starch then fortunately there are many options such as steamed baby or new potatoes, flatbreads or other good bread or rice.
