Can you use tequila, as for the Tequila And Lime Chicken, to marinate beef and pork as well? Or is vodka or rum or another alcohol better for marinating beef? Thank you!

Nigella's Tequila And Lime Chicken from SIMPLY NIGELLA) marinates chicken breasts in a combination of lime, tequila and chilli, before roasting them in a hot oven. The mixture of alcohol and acidic lime juice helps to slightly tenderise and flavour the chicken.

The mixture would also work for pork or turkey, but the flavours of the marinade would probably be lost on the stronger taste of beef. Vodka has no real taste but is good carrier for other flavourful ingredients in a marinade, such as in the Vodka Marinated Steak. Darker alcohols are popular with dark meats and red wine is a traditional option. Or for Nigella's Juicy Beef Skewers With Horseradish Dip the marinade is made with red wine vinegar rather than wine itself.
