Full question
Can I make Chilli Jam and use it the next day instead of keeping it in storage for a month? Will it still taste alright?
Our answer
Nigella's Chilli Jam (from NIGELLA CHRISTMAS) is a colourful and spicy condiment that is perfect to go with cold meats and cheeses. It is made with a combination of chillies, vinegar and jam sugar. The jam sugar contains pectin, which helps the Chilli Jam to set.
Chilli Jam does not need "maturing" in the way that a chutney needs maturing, so you could use it the next day once it has fully cooled and set. The advice to make the jam up to one month ahead is based on assuming that you will be giving the jam as a Christmas gift and then that it may be stored by the lucky recipient for a while before using. Unopened, the Chilli Jam will last for up to a year. Once opened, the jar should be stored in the fridge and used within a month.
