Can the chocolate sauce for the Caramelised Pineapple be made without the alcohol?
Our answer
Nigella's Caramelised Pineapple With Hot Chocolate Sauce (from NIGELLA SUMMER) grills chunks of pineapple until sweet and burnished. The pineapple is served with a hot chocolate sauce for dipping.
The sauce is made with Malibu, a coconut-flavoured white rum. The Malibu adds a coconut flavour to the sauce but if you don't want to use alcohol then we would suggest replacing the Malibu with extra cream. You can add a couple of drops of coconut extract if you like, but some extracts contain traces of alcohol so check if it is suitable first.
