Cheesecake Base Without A Food Processor

Full question

I don't have a food processor but would like to make the Nutella Cheesecake. Can I just crush the biscuits and then mix in the rest of the ingredients with a mixer?

Our answer

Nigella's Nutella Cheeecake (from NIGELLISSIMA) has a base made from digestive biscuit crumbs (or graham cracker crumbs), Nutella, butter and hazelnuts. The biscuits themselves are easy to crush by putting them into a resealable bag and crushing with a rolling pin. However in the recipe chopped hazelnuts are also ground in a food processor with the biscuit crumbs and you may find that it is difficult to crush chopped hazelnuts by hand without making them too oily. It is possible to use ready-ground hazelnuts in the base instead, but if you don't wish to buy two forms of hazelnut then just omit the nuts completely from the base.

We would suggest melting the butter for the base in a medium-sized saucepan over a low heat. Remove the pan from the heat and then stir in the 1 tablespoon of Nutella until it has also almost fully melted. Tip in the biscuit crumbs and ground hazelnuts, if using, and stir until everything is thoroughly mixed together, then press the crumbs into the base of the springform pan.
