Full question
Can I make the Cheesy Chilli without chorizo please? Or can I substitute something as I am unable to eat chorizo?
Our answer
Nigella's Cheesy Chilli (from KITCHEN) is a shortcut dish that uses chorizo as a flavour base. The chorizo lets out a spiced oil as it cooks, adding a smoky, slightly spicy note. It is possible to omit the chorizo but you need to add a little oil and some extra spice to the dish. We would also suggest that you increase the mince (ground beef) by 100g to give 600g (1¼ pounds) in total.
The main flavouring in chorizo is Spanish smoked paprika and we would suggest adding 1-2 teaspoons to the chilli. You can buy smoked paprika in hot (picante) or mild (dulce) forms so the amount used will need to be adjusted according to the type of paprika you have and your own taste and heat requirement. You should also start the recipe by heating a tablespoon of vegetable oil in the pan then, once it is hot, sprinkle over the paprika and stir in the beef before continuing with the recipe.
