Is it possible to make the Chicken And Pea Traybake in advance and then finish it off half an hour before serving? Does the chicken skin stay crispy?

Our answer

Nigella's Chicken And Pea Traybake (from AT MY TABLE) is a one pan dish made with frozen peas, leeks and chicken thighs. As they cook the peas become sweet and intense and the chicken yields moist and succulent flesh with crispy skin. Unfortunately whenever you cook chicken and then cool it, the skin will turn soft and doesn't really crisp up again on reheating. So we don't recommend cooking the dish in advance and reheating it, though leftovers could be reheated.

However, depending on your timings the traybake could be cooked and then stand in a warm place, uncovered, for around 30 minutes before serving. The chicken skin will stay fairly crisp during this time and the dish should stay warm. The chicken will also have a short period to rest after cooking, which is usually beneficial. If the peas become too cool, you can pop the tray back into a hot oven for 5 minutes before serving.
