Can I make the Chocolate Banana Muffins using coconut oil? Also can I substitute coconut flour for the flour and raw cacao for the cocoa? And how much?
Our answer
Nigella's Chocolate Banana Muffins (from KITCHEN) are made with ripe bananas, flour, eggs, sugar, vegetable oil and cocoa powder (which is unsweetened). It is possible to use cacao powder instead of the cocoa and coconut oil instead of vegetable oil in the same quantities. However as vegetable oil is liquid you will need to melt the coconut oil before using it and make sure that you let it cool slightly before mixing it with the mashed bananas.
Unfortunately coconut flour is not a good substitute as coconut flour absorbs a lot of liquid and the muffins will be very dry and crumbly after baking. So we would advise using regular plain (all-purpose) flour, or you could use spelt flour as an alternative (though please note that spelt flour is not gluten-free).
