I was reading that Prince William has requested a chocolate biscuit cake to be served at his wedding reception. I looked up the recipe and found one on-line. It seems to be a cake with store-bought rich tea biscuits baked into it. I was wondering if you had recipe for this cake? And if you had a recipe for these tea biscuits? The chocolate biscuit cake requested by Prince William for his wedding is actually an unbaked cake made from crushed biscuits/cookies and melted chocolate, with a few extra ingredients. It is often known as chocolate refrigerator cake or rocky road or sometimes also as tiffin. Nigella has a recipe in Nigella Express (p258) using rich tea biscuits and a variation in Christmas (p28) which uses amaretti cookies instead.
Rich tea biscuits are a dry, semi-sweet type of cookie which are popular for dunking in mugs of tea. You can buy the McVitie's brand of the cookies on-line in the US from British Delights and the British Tea Store. Animal crackers are fairly similar in taste and texture so you could also try these, crushed, as an alternative.
